Honey Chia Pudding

Chia Seed PuddingI’ve been adding chia seeds to smoothies for quite some time now. Something I’ve tried less frequently is chia pudding. I made a really fresh-tasting strawberry chia pudding earlier this year. I don’t know why I haven’t done it much since. But that changes with this chia pudding. 

Sometimes you want something sweet after dinner, but you don’t necessarily want something like a cake or ice cream. Sometimes you want something a little different. This pudding fits the bill. The pudding is is almond milk-based and flavored with honey and rose extract and garnished with nuts and berries. 

It’s a combination that’s so simple and easy that it almost doesn’t warrant a recipe. Almost.

Honey Chia Pudding

Ingredients
1 1/2 cups almond milk
2 tablespoons honey
1/4 teaspoon rose extract
1/3 cups chia seeds
chopped almonds
raspberries
Instructions
Combine almond milk and honey. Whisk thoroughly. Add rose extract and mix.
Add chia seeds to the almond milk mixture.
Allow mixture to set for several hours or overnight, it will thicken.
To serve, garnish with coarsely chopped almonds and raspberries.
