Maple Walnut Blueberry Granola — With Recipe

bluegranola1Sometimes, you get the sudden urge to start playing with vine decide to make some homemade granola because you just ran out of the last batch that you made. In moments like these, you think about your errant past when you used to buy granola, but no more. These days, you realize, you don’t even need to use a recipe. These days, you think to yourself, you understand, fundamentally, what is in a granola.

It is in this moment that you stare down your oats and get to work. Your pantry has plenty of dry goods. You like to think that this is your primal gatherer at work. You push from your mind disparaging animal terms like “pack rat” and “magpie”.

bluegranolaThe combination that is meant to make sweet love combine on your palate becomes clear to you. Oats, cinnamon, walnuts, blueberries, coconut, and maple syrup. That flaxseed, you throw that in for kicks.

You get to work. 

Your kitchen smells like love warm granola. You look forward to the morning. You end your day in victory.

Maple Walnut Blueberry Granola

Ingredients
3 cups old fashioned oats
1 cup shredded coconut
1 cup walnut pieces
2 tablespoons flaxseed
2 teaspoons cinnamon
2/3 cups maple syrup
1/3 cup canola oil
1 cup dried blueberries
Instructions
Preheat oven to 350 degrees.
In a large bowl combine oatmeal through cinnamon.
Add maple syrup and canola oil. Stir thoroughly until the liquid ingredients are evenly distributed through the oats mixture.
Line a cookie sheet with parchment paper.
Spread the oats mixture evenly over the parchment.
Bake the mixture for thirty minutes, stirring the mixture halfway through this baking time.
Once granola is golden, remove from the oven.
Cool the granola, then stir in the dried blueberries.
