One of the birthday goals is to make granola. I haven’t touched the goal…until now. Goals like this one work best when you spread them out across the year. But, I have a bit more than 9 months to make this goal happen. I think it’s attainable.
Anyway, here I am, at home looking around with new year thoughts like, “I should get things in order around here.” That’s when I noticed some small quantities of nuts and seeds and remembered my granola goal. What I really want to make soon is a gingerbread-inspired granola…but I started looking around online when I found a recipe for quinoa granola. I am one of the folks on the quinoa train, have been for quite a while. So, a new application for my grain of choice seemed like a good idea.
I adapted this recipe a bit for what I had on hand. And I must say that I am glad that I know enough to taste and smell nuts that have been hanging around in glass jars for a while. Those macadamia nuts were not to be in this granola! In addition to the change in nuts, I also used more oatmeal than the recipe called for, because I didn’t have buckwheat. I also used different oil (olive oil instead of coconut oil), and a different sweetener (agave syrup instead of maple syrup.)
All in all, it turned out delicious, though when it came out of the oven, I was frightened. It was rather moist for granola. The quinoa addition is a winner! It may have to make its way into more granolas. Finally, I am always happy when I get closer to one of my goals!
