My love for nachos is unnatural. It is obscene. When I think of queso, I imagine swimming in a pool of it, slowly, the cheese caressing my every surface.
However, nachos don’t really love anyone back. In the long term anyway.
So, I decided to try to make something that I could have more often than the nachos that make me think inappropriately loving thoughts every time.
I roasted some sweet potato chunks that had been season with cumin and salt, and topped the potatoes with nacho fixings. And it works. The sour cream-looking dollop is actually yogurt with lime juice, salt and cilantro. I will definitely make this again. Maybe next time I won’t forget to add the avocado.
