Rosemary and Cranberry Chocolate Chunk Cookies

I am a cookbook fiend.

For someone who eats meat, a large proportion of my cookbooks are vegetarian or vegan. I like a lot of the things that those authors come up with.

When I flipped through Isa Moskowitz’s latest cookbook Isa Does It, I spied a recipe for Rosemarry Chocolate Chip cookies. That recipe sounded so good.

I don’t do a whole bunch of vegan baking, so I don’t always have the ingredients necessary, but I do quite a bit of conventional baking. So, it wasn’t a problem at all to whip up these cookies using more of a standard, back-of-the-bag recipe.

I knew when I smelled these baking that I wouldn’t regret making them.

And I was right!

Rosemary Cranberry Chocolate Chunk Cookies

Ingredients
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup (2 sticks) butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 teaspoon vanilla extract
2 large eggs
2 cups (12-oz. pkg.) chocolate chunks
3/4 cups dried cranberries
2 tablespoons finely chopped rosemary
Instructions
Preheat oven to 375° F.
Whisk together flour, baking soda and salt in small bowl.
Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy.
Add eggs, one at a time, beating well after each addition.
Gradually beat in flour mixture. Stir in morsels and nuts. Drop by rounded tablespoon onto ungreased baking sheets.
Bake for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
