I always have; I always will. One of the things that I remember about Thanksgiving time as a child is that often we had pot pie made from the leftovers of the turkey. I loved that pot pie! See, just the memories render me repetitive.&nbsp;<\/p>\n<p>One of the things about a food that you love is that it can be a challenge to try something new with it. You get those ingredients together and know that you have a choice between putting something together that you know that you love or trying something new. Even if you know in your mind that success is likely, it is something else entirely to take a plunge. This is not a euphemism. I am really talking about food here.<\/p>\n<p><a href=\"https:\/\/sherlonya.net\/blog\/archives\/2929\/potpie1\" rel=\"attachment wp-att-2937\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter\" alt=\"potpie1\" src=\"https:\/\/i0.wp.com\/sherlonya.net\/blog\/wp-content\/uploads\/2013\/09\/potpie1.gif?resize=500%2C399&#038;ssl=1\" width=\"500\" height=\"399\"><\/a><\/p>\n<p>I&#8217;ve had the idea to make a curry chicken pot pie for some while. Since I had some leftover chicken in the fridge, today seemed like the perfect day. After all, curries come in a variety of textures. It isn&#8217;t a stretch to thicken things up so that they can stand up in a pot pie. In terms of the carb component, a pie crust isn&#8217;t that much of a stretch. Curries are eaten not just with rice but in roti.&nbsp;<\/p>\n<p><a href=\"https:\/\/sherlonya.net\/blog\/archives\/2929\/potpie3\" rel=\"attachment wp-att-2938\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-2938\" alt=\"potpie3\" src=\"https:\/\/i0.wp.com\/sherlonya.net\/blog\/wp-content\/uploads\/2013\/09\/potpie3.gif?resize=478%2C500&#038;ssl=1\" width=\"478\" height=\"500\"><\/a><\/p>\n<p>You know that your experiment was a success when you find yourself wondering whether you can hide what you made so you don&#8217;t have to share it with your child. Yes. I said that. I am ashamed. But it was so good. And I did share it. Alex devoured his portion. This recipe has to go into the rotation.<\/p>\n<p><a href=\"https:\/\/sherlonya.net\/blog\/archives\/2929\/potpie1\" rel=\"attachment wp-att-2937\"><br \/>\n<\/a>&nbsp;<\/p>\n    <div class=\"hrecipe blog-yumprint-recipe blog-yumprint-standard \" yumprintrecipe=\"b_GB\" itemscope itemtype=\"http:\/\/schema.org\/Recipe\">\t<div class=\"fn blog-yumprint-recipe-title\" itemprop=\"name\">Curry Chicken Pot Pie<\/div>\t<div class=\"published blog-yumprint-recipe-published\" itemprop=\"datePublished\">2013-09-29 14:03:26<\/div>\t<div class=\"blog-yumprint-header\">\t\t<div class=\"blog-yumprint-save blog-yumprint-action\"><a href=\"http:\/\/yumprint.com\/app\/object\/b_GB\">Save Recipe<\/a><\/div>\t\t<div class=\"blog-yumprint-print blog-yumprint-action\">Print<\/div>\t<\/div>\t<div class=\"blog-yumprint-spacer\"><\/div>\t<div class=\"blog-yumprint-recipe-contents\">\t\t<div class=\"blog-yumprint-ingredient-section\" yumprintsection=\"0\">                <div class=\"blog-yumprint-subheader\">Ingredients<\/div>\t\t\t<div class='ingredients'>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"0\" itemprop=\"ingredients\">1 T olive oil<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"1\" itemprop=\"ingredients\">1 small onion<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"2\" itemprop=\"ingredients\">1\/4 t salt<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"3\" itemprop=\"ingredients\">2 T all purpose flour<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"4\" itemprop=\"ingredients\">1 T curry powder<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"5\" itemprop=\"ingredients\">1\/2 t cumin<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"6\" itemprop=\"ingredients\">1\/2 t black pepper<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"7\" itemprop=\"ingredients\">1 cup milk<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"8\" itemprop=\"ingredients\">2 cups cooked cubed chicken, 1\/2 inch cubes<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"9\" itemprop=\"ingredients\">2 cups frozen peas and carrots<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"10\" itemprop=\"ingredients\">1\/4 cup dried cranberries<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"11\" itemprop=\"ingredients\">1\/2 cup chicken broth<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"12\" itemprop=\"ingredients\">2 pieces pre-made pie crust<\/div>\t\t\t\t<div class=\"ingredient blog-yumprint-ingredient-item\" yumprintitem=\"13\" itemprop=\"ingredients\">1 egg, beaten<\/div>\t\t\t<\/div>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-method-section\" yumprintsection=\"1\">\t\t\t<div class=\"blog-yumprint-subheader\">Instructions<\/div>\t\t\t<div class=\"instructions\" itemprop=\"recipeInstructions\">\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"0\">Preheat oven to 425\u00b0.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"1\">Heat olive oil in a heavy-bottomed pot over medium heat.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"2\">Add onions to the oil and sprinkle salt over the onions. Stir the onions and cook them until soft, about 4 minutes.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"3\">Add flour, curry powder, and pepper to the pot, and stir. Cook 1-2 minutes.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"4\">Slowly add the milk to the pot, stirring until you have a smooth, creamy sauce.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"5\">Add the chicken, peas and carrots, and dried cranberries and stir.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"6\">Add  the chicken broth and stir until the mixture has a consistent texture. Cook until the mixture is warmed through, about 5 minutes. Remove from heat and set aside.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"7\">Unroll your pie crust.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"8\">Place the bottom crust into a pie plate.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"9\">Spoon the pot pie filling into the bottom crust<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"10\">Top the pie with the other crust. Trim away any extra and pinch the top crust and the bottom crusts together.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"11\">Make a few slices in the top of the pie dough so that the pie can vent.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"12\">Using a pastry brush, apply the egg to the top of the pie.<\/div>\t\t\t\t<div class=\"blog-yumprint-method-item\" yumprintitem=\"13\">Bake for 15-20 minutes, until pot pie becomes brown.<\/div>\t\t\t<\/div>\n\t\t<\/div>\t\t<div class=\"blog-yumprint-note-section\" yumprintsection=\"2\">\t\t\t<div class=\"blog-yumprint-subheader\">Notes<\/div>\t\t\t<div class='notes'>\t\t\t\t<div class=\"blog-yumprint-note-item\" yumprintitem=\"0\">You can also vent your pie by using a small cookie cutter to make shapes in the top pie dough.<\/div>\t\t\t<\/div>\n\t\t<\/div>    <div class=\"blog-yumprint-recipe-source\">Sherlonya https:\/\/sherlonya.net\/blog\/<\/div>\t\t<\/div>\n\t<\/div>\n","protected":false},"excerpt":{"rendered":"<p>&nbsp; I love pot pie.
