And about all of it is so juicy and bright. Last night I cut open a cara cara orange and made nearby people behold the beauty!

So, do I get a good grade for looking for things to enjoy that come with the winter? Citrus fruit is probably my entry-level winter thing to enjoy. Well, after Christmas lights and an abundance of peppermint. Recently, I went to the store and picked up a gorgeous bag of tangerines. I decided to use some of them to make some tangerine curd.

Curd is so versatile. (Excuse me as I ponder exactly when I became a person to, in all seriousness, think sentences like that one.) My favorite thing to do with it is to eat a bit of it on Greek yogurt.

This time, however, I wanted to do something a little more fun. So, I filled pastry cups with the curd and topped it with pomegranate arils.

My son, who is lukewarm on sweets, loved these. That may, however, be because the pastry cups themselves weren’t sweet, and both the curd and the pomegranate were tangy. I’d make these again. They’d be fun and pretty to take to a potluck.

I think I’ll make these again. They’re pretty easy and plenty cute.

If you make these, you’ll have extra curd. It would be great on a dish of Greek yogurt. You could also just make more puff pastry cups so that you’ll have less leftover curd.

Tangerine Curd Cups with Pomegranate

2013-12-30 08:00:18

Save Recipe

Print

Ingredients

12 puff pastry shells

3 egg yolks

zest of one tangerine

1/4 cup tangerine juice

5 tablespoons sugar

pinch cardamom

3 tablespoons unsalted butter, cold and cut into small pieces

1/4 cup pomegranate arils

Instructions

Prepare puff pastry shells according to instructions on the box.
