Upon looking at it, I thought, &#8220;I have the ingredients to make something like that.&#8221; So, I did. I was way looser with measurement. Fast, easy, delicious.<\/p>\n<p>Olive oil<\/p>\n<p>1 medium onion, chopped<\/p>\n<p>1 tsp garlic, minced<\/p>\n<p>2 baking potatoes, peeled and diced<\/p>\n<p>6 cups water<\/p>\n<p>1 can garbanzo beans<\/p>\n<p>salt<\/p>\n<p>3 handfuls spinach, cleaned.<\/p>\n<p>1. Heat the olive oil. Once hot, add the onion. Cook until onion begins to brown, add garlic. Cook for a few minutes.<\/p>\n<p>2. Add potatoes, stir things up a bit. Then add water and salt to taste. Cook until the potato texture is what you like.<\/p>\n<p>3. Add garbanzo beans. Stir it all up.<\/p>\n<p>4. Add spinach. Allow spinach to wilt.<\/p>\n<p>And there you have it.
