I had never heard of “eggs in purgatory” until very recently. I saw it once, thought it interesting, then saw it everywhere.<\/p>\n

This morning was the perfect morning for a breakfast such of this. I was sick enough to be sort of slow and uncomfortable, but not sick enough to justify calling in sick when I had a few specific things that I needed to get done. Sort of purgatory-ish.<\/p>\n

So when I opened to refrigerator to see just the right amount of tomato sauce in the fridge, I knew what had to happen. And so it was.<\/p>\n
