Caldo Verde

I was playing around with on Bloglines when I came across a soup I had saved as new.  At 30 Bucks a Week, there was a recipe for what they called Quasi Caldo Verde. Upon looking at it, I thought, “I have the ingredients to make something like that.” So, I did. I was way looser with measurement. Fast, easy, delicious.

Olive oil

1 medium onion, chopped

1 tsp garlic, minced

2 baking potatoes, peeled and diced

6 cups water

1 can garbanzo beans

salt

3 handfuls spinach, cleaned.

1. Heat the olive oil. Once hot, add the onion. Cook until onion begins to brown, add garlic. Cook for a few minutes.

2. Add potatoes, stir things up a bit. Then add water and salt to taste. Cook until the potato texture is what you like.

3. Add garbanzo beans. Stir it all up.

4. Add spinach. Allow spinach to wilt.

And there you have it. I thought the soup was lovely with a bit of Parmesan sprinkled on top.
