Old Standby

Everyone has that old standby recipe, right? There is that one ingredient that whispers at you, cat calls perhaps, as you walk by it in the grocery store. My ingredient is kale. When there is a bunch of kale, it will not go bad. I will dress it simply and devour it. Fortunately, Alex too, can make quick work of kale. This was totally dinner in 15.

Standby Kale:

noodles for 2, preferably whole wheat spaghetti.

a pinch of salt

olive oil

I bunch of kale, washed, stemmed and torn into manageable bits

1t or so garlic

second pinch of salt

1/2 lemon

Parmesan cheese, grated

1. Make your pasta like you like it. adding that pinch of salt. Drain it, reserving 1/2 cup of the cooking liquid.

2. Heat about a tablespoon of olive oil.

3. Add the garlic, stir things up for a minute or two.

4. Add the kale. Turn it over with tongs until it is cooked through, but still has some resistance.

5. Add the salt, squeeze the lemon over the kale, being careful not to drop seeds in there.

6. Add the noodles. Toss things about with the tongs.

7. Add the cooking liquid. Toss things about with the tongs.

8. Plate it up.

9. Sprinkle with Parmesan cheese.

Eat it and make delicious noises. Then pat your stomach and feel good about the healthy greens you just put in there. Be thankful for the seductive powers of kale.
