Coconut Tapioca

I have been meaning to make bubble tea for forever and a day. Okay, right, that is obviously an exaggeration, but seriously it has been years. I even have the boba tapioca pearls in my pantry. Still it hasn’t happened. Today was not the day either. However, being recently sick and propped up in my bed for hours at a time meant that  I was looking at magazines, when I came across a recipe for Coconut Tapioca.

I knew, however, from the get go that mine would not be as pretty as the photo in the magazine. This is not just because they have photographers and people to plate things prettily. No, this is more because my tapioca pearls were all multi-colored. Cause I’m like that. Give me the choice between something classy and understated versus something bright and fun and colorful, no matter what my gut might say, bright it is going to be!

Everything was going along smoothly until I encountered a conflict in instructions. The recipe said to cook the tapioca pearls for 40 minutes. The packaging suggested 5 minutes. What do you do? Compromise.

I should have trusted the recipe. Trust me on this one. The flavors were great. The textures left much (or less) to be desired.
