Cherry Coke Cake

I can’t think about Cherry Coke without thinking about that Savage Garden song that says something about, “Just like a drink of cherry cola.” Okay, I’ll stop frontin’ I know exactly what Savage Garden song that is (I Want You).

That’s neither here nor there though.

I was going to a potluck yesterday and had decided the day before that I would be bringing cake. Cherry cola cake.  It seemed like a fun thing to do, and a cute idea. At first I was thinking of a cake with some sort of regular cola icing. Then it occurred to me that other people would have made such a cake, and I found a recipe online at Sweet Treats: A Baking Blog.

I pretty much followed her recipe, I did make a few tweaks. First, I couldn’t find “cola syrup” so I omitted it. Second, I didn’t garnish the cake with bing cherries, but with maraschino cherries. Also, I decided to add some mini chocolate chips for garnish.

I had never made an icing that involved flour before, and I have to admit that it frightened me. However, it turned out well. So, I learned something new too.

Overall, I was pretty happy with this cake, and am one cake closer to this year’s “bake 6 cakes” goal.
