English Muffin Bread

A long time ago, I came across a recipe for microwave English muffin bread. It piqued my curiosity at the time. This was in my early days of online recipe searching. Seriously, I still have binders full of recipes that I printed out from the internet, as well as more than one binder of recipe clippings from food magazines (separated by category, no less). It’s like I was afraid that among the thousands of recipes out there I’d miss the opportunity to make a certain thing. I mean, I have a pocket in an accordion file that only has meatball recipes in it. 

I digress.

More recently, I decided to try to find the recipe again. I didn’t find the original site that put me onto this idea, but I did find a recipe. Funny thing is that the blog that I found had this recipe because someone else contacted the blogger looking for  the recipe (after finding the site via Google.) That blogger hadn’t written about this bread, but did some research and added a post about it.

Finally, I decided that it was time for me to go ahead and make this bread. Once you start wondering how many years you’ve been meaning to make something, I think that it’s time to either make that thing or decide that you’re not going to make it at all.

I’m glad that I made the bread. I love it’s texture…once it’s toasted, that is. When the bread comes out of the microwave, it looks a little weird. Like, did-I-do-this-right weird. I think I’m making soup later this week. If I do, I will be sure to toast up a slice of this bread to have with it.

I would say that I wish that I hadn’t waited so long to try the recipe, but there’s nothing gained in that. I am glad that I finally made it though. I’m pretty sure I’ll make it again. I have a variation or two in mind for it.
