Sometimes it’s a flavor combination that gets to you. It haunts your thoughts, distracting you from the things that you know you ought to do.
I was stricken by the idea of combining key lime pie and coconut. After all, lime and coconut are so good together. In a sitcom they would be…. You know what, I’m not going there. I’m not going there at all.
When I decided to make this milkshake, I had certain things in mind. I thought that I would traipse on into the store and pick up come coconut ice cream, add some coconut extract, some coconut milk to the mix and then add the lime flavor with a bit of lime juice and some lime curd.
I guess I forgot that every grocery store doesn’t have every ingredient. Lime curd, I suppose, isn’t one of those staples like grape jelly. So there I was, walking around in the store determined to make the milkshake which at this point had consumed me. My milkshake brought myself to the yard…. You know what, I better not go there either. I better not go there at all.
Finally, I settled on vanilla ice cream and hoped that I could make up for the ice cream flavor with coconut extract, coconut milk and a bit of coconut rum. You like how I created a dang legitimate reason to add rum to this shake? For the lime flavor, I added lime zest, lime juice and key lime yogurt.
This one is a keeper. I do wonder what the lime curd version would have tasted like. I’m not afraid to go there.
